Ingredients:

1 Stick Butter

1 Cup Brown Sugar

2 Eggs Room Temp

5 bananas

2 Cups AP Flour

1 tsp Baking Soda

1/4 Tsp

Directions:

Heat oven to 350 degrees. Lightly hit 9x5 loaf pan with nonstick spray. Using an electric mixer whip butter, then cream in sugar. Mix in eggs one at a time, then add bananas and mix until mostly homogenous.

2. Mix dry ingredients together and then mix into wet ingredients. Pour into pan, then top with optional ingredients.

3. Bake at 350 for 50-60 minutes until a toothpick inserted into center comes out clean. Let cool 10 minutes, then turn out on wire cooling rack..

Convection Steam Oven Ribs Recipe

Ingredients:

1 Rack Loin Ribs

1 tbsp seasoned cajun salt (we used Slap Ya Mamma seasoning)

1 tbsp smoked paprika

1 tbsp oregano

2 tsp cumin

1.5 tsp pepper

1 tsp garlic powder

2 tsp sweet paprika

1 tsp cayenne pepper

BBQ Sauce of your choice

Directions:

1.Place your racks of ribs on a solid pan or a large plate, generously season with the above list of seasonings.

2. Cover with plastic wrap and leave in the fridge overnight or at least 2 hours.

3.Line a solid pan with parchment paper, when ready to cook place your racks on the solid pan meat side up. Select Convection Steam Mode and 265 degrees. Set the timer for 1 hour and 15 minutes.

4. Brush BBQ onto cooked ribs, place in broiler for 2-3 minutes.

5. Slice and Enjoy!

Cast Iron Roast Chicken

Cast Iron Roast Chicken

Roast Chicken

Prep Time: 30 Minutes Serves 3-4

Ingredients:

1 whole chicken

1 stick of butter

1 tbsp fresh thyme

1 tbsp fresh sage

1 tbsp fresh rosemary

6 yukon potatoes

1 large carrot

3 medium turnips

2 large parsnips

Salt and Pepper

Directions:

Leave the chicken uncovered in the fridge overnight. Let the butter soften on the counter overnight.
The next morning, take your softened butter and mix in your minced thyme, sage, and rosemary to create your compound butter.
Peel the carrots, turnips, and parsnips. Cut the carrots and parsnips into ¾” thick length wise. Cut the potatoes in half. Cut the turnips into quarters. Try to make the vegetables consistent to ensure they all cook evenly. Arrange on the bottom of a 10” cast iron skillet.
Take a small paring knife and gently cut the membrane between the chicken breast meat and the skin. Using your hands, work outwardly to create a small separation between the meat and the skin. Rub your compound butter into the separated area you’ve created, save a little bit for the outside. Season generously with salt and pepper. Place the chicken on top of the vegetables in the cast iron skillet.
Using the M Series Wolf Oven, you can use the gourmet roasting-poultry setting with the built in temperature probe. Place the probe into the thickest part of the chicken thigh and the oven will alert you when the chicken is of the correct cooked temperature. Carefully remove the chicken from the oven and let it rest for 10 minutes. Stir Vegetables, carve chicken and serve.

Mascarpone Cheesecake

Mascarpone Cheesecake

Convection Steam Oven Cheesecake

Prep time: 20min Serves 8-12

Ingredients

Crust:

1 1/2 Cup Graham Cracker Crumbs

1/4 cup sugar

5 tbsp butter

zest of 1 lemon

Filling:

16 oz cream cheese

16 oz mascarpone cheese

1 1/2 cup sugar

1 tbsp lemon juice

1 tsp vanilla extract

4 eggs (room temperature)

Directions:

Step 1 making the crust

Combine sugar, and graham cracker crumbs. Stir well. Pour in melted butter, and mix until combined.

Step 2

Press the mixture firmly into just the bottom of a 9" springform pan.

Step 3

Set your steam oven to to Convection Mode at 335F and bake your crust for 12 minutes. Remove pan from oven and set aside to cool.

Step 4 making the filling

Using a stand mixer, beat cream cheese, mascarpone cheese and sugar until smooth. Beat in the lemon juice and vanilla. Add the eggs in one at a time. Keep mixing until all are combined.

Step 5

Pour your batter into the cooled crust pan. Smooth out the top with a spoon. Cover your cheesecake with 2 layers of plastic wrap, having the ends of the plastic wrap underneath the pan. Place the wrapped pan on a sheet of aluminum foil. Fold the edges of the aluminum foil in to secure the plastic wrap.

Step 6

Place your pan with foil and plastic wrap into your convection steam oven and use the Convection Steam setting at 225F for 1 hour and 45 minutes. Take the cheesecake out of the oven and carefully remove the plastic wrap and remove spring form pan sides.. Allow to cool for 1 hour. Re-wrap the cheesecake in plastic wrap and place in the refrigerator until cold. Once cold, cut with a warm knife and serve.

This is the time of year to freshen up things at home, a good place to start is with a fresh coat of paint! I know that paint color you've been living with for the past 10 years feels as comfortable as a comfy old pair of denim jeans, but it's time to shake off the Latte, Shaker Beige, & Wicker Basket colors of yesterday. Move it over too cool neutral grays with colors like P&L's Windham, Trout or Half Tone. If going to cool scares us warm color toned creatures, you can ease into the change by trying "greige" colors that combine both warm & cool tones. Some of my favorite colors are Sivler Mink, Dawn Mist & Shadow Beige.

So let's get moving, throw down those drop cloths, pick up that roller & start repainting, you'll be glad did you?

How could one not love a furry face eager to give you kisses and sit in your lap?! The staff at Gotcha Covered has a soft spot for our four legged friends. So much so that the majority of our staff has at least one dog, if not more. With that in mind, you can imagine our excitement this last week when one of our owners, Kelli Fowler, brought in her pup for the day.

Boris, a mischievous Tibetan Terrier, spent the day talking to staff and clients alike, making every attempt to sit in laps, and just generally enjoying being spoiled by everyone. It was an absolute treat to have him! What’s great about Gotcha Covered is Boris isn't the only dog we entertain. It's not uncommon for dogs to bring in their owners in hopes of being spoiled, getting treats, etc. So we would love to invite you and your four legged best friend in sometime, we’ll swoon over the pup and have fun helping you make your dream home a reality!

Renovating made easy… and wait for it… fun!

We've all had those times where we begin to notice a change in our home, somehow and what seems like in a blink of an eye, that new beautiful design we modeled our kitchen after starts to seem dated. We start to wonder when did that shag green carpet in the living room become uncool or why does it seem like my neighbors look at my kitchen like it was brought through a Delorean? Well if you are anything like me you put off that updating for several reasons but mainly the hassle and stress of it seems too daunting to deal with. Renovating should be fun, exciting, and most of all free of stress! Let's take a look at some ways you can make renovating your home just that.

Get that dreaming started

People forget that one of the most important things about renovating is the planning and dreaming that should always start the process! In this case Pinterest is your friend (other cases like when it shows you a workout and then a decadent dessert recipe next to each other it's a nemesis),pin those ideas to your hearts content! Take pictures of your current room and go to your nearest design center and play with the product, Gotcha Covered is always excited to dream with you (wink wink). It's fun to put together tile, next to counter top, and cabinet style. Play and have fun!

Pick the perfect Interior Designer

Next, meet new designers and make new friends. Designers are a breed unto their own, with creativity in spades and usually fun creative kids at heart, the right designer for you will just as likely become one of your best friends as they will help make your dream a reality. So choose wisely, make sure that your communication styles align and that they can clearly see and understand your general vision. The best designer will be able to take you that extra step further from your pinterest page by giving you the latest and greatest all while making sure that you stay within your allotted budget (you heard correct they manage the budgeting!). The best part is if you have a designer at a design center that you get the product from they typically don't charge extra for their time. Wait what did you say free consultations and a built in accountant? Why yes, yes I did. You can thank me with coffee and pretty Kate Spade office supplies.

Measure, Measure, and Measure again

Now lets get this party started, after you've had a chance to dream and play you will want to get the space measured. Most design retailers will have someone on staff that can measure, and if they are installing they will insist on completing the measure themselves, this is a load off your back-splash so to speak (couldn't resist), but if you are a DIY Queen or King and want to complete the install yourself you can measure and give your retailer the amounts to order. Once measurements are complete this is when your designer may come back and confirm you are still within budget and if not take you back to previous dream step and repeat.

The waiting game

This is, at least for me, the hardest part of the process and that's waiting for the product to arrive. Although during this time your room will be in the process of getting prepped which can be fun in and of itself. If you are doing it think of this as some aggression therapy. Turn on that loud music and get to tearing, removing, and throwing stuff around. If someone else is handling it, might I suggest a lawn chair and a nice long island ice tea in the next room over as you watch the fun, maybe offer none alcoholic ice tea for the folks wielding the heavy machinery though. You know cause gravity and oh and liability.

Bring it all together now

The dreaming happened, the Designer is doing their work, the measurements are complete, and your room is as bare as a babies bottom. Let the final (and best part) commence. If you are doing the install again turn on that fun (maybe less angry) music, pop on those gym shorts, and enjoy some old fashion manual labor. If you have someone else installing, repeat step from the tear out, again sans alcohol for the installers, grouting tile and tequila shots don't typically mix.

Gloat and Enjoy

Make sure once it's all said and done that you throw a big party, and show off to your friends and neighbors! Warning: renovating is addictive and may cause you to have a beautiful home and be the envy of all your friends.

What happens in Vegas stays in Vegas?! Not in this case, we are way too excited to share! Our owners and some of the designers had the great opportunity to attend the Design and Construction week in Las Vegas in January and saw a lot of great new things coming to the market! Companies like Omega Cabinetry, Organized Living, Wilsonart, Formica, and many others all came together to show their latest and greatest. Eight to ten mile walks a day later, here are a few items that we noted are going to be BIG this year.

Tile

Continued rise of Subway tile as well as beveled subway tile. Tile flooring that looks like wood is also a continued favorite this year.

Flooring

Luxury vinyl Tile (LVT) and brick is for flooring is all the rage this year!

Kitchen/Bars

Flat islands, patterned back splashes (including the 3x6 subway tile craze), and using every bit of space to stay organized. Bringing in Nature in small doses. Islands specifically are taking center stage (get it?) in kitchens by getting larger and more ornate with intricate leg designs, corbels, organizing built ins and accent coloring.

Colors

2016 appears to be continuing the modern obsession with Neutral colors like whites and gray with pops of colors and textures like the champagne gold accents like cabinet hardware.

Hardware

Last but not least is the accentuation of hardware this year, while it's always been a great way to spice up a living space, it appears to be front and center this year.

Watch out chrome, oil rubbed bronze, and (shutter) brass, there's a new color in town and winter's gold is going to blow your design mind!

Winter Gold is the latest and greatest introduction to the finish world and it's making a ton of noise. The color itself is a mixture of chrome and brass with a muted finish. This combination allows it to work with both gray and beige colors!

Hello remodel enthusiasts! Thanks for the visit, wow do we have a post for your today! Recently we had the privilege of remodeling a very outdated master bath into a bright and inviting haven for our client.

We jumped at the chance to make this outdated bathroom into something beautiful. The client worked with our designers to bring in a bright and airy bathroom with feminine touches.

The most prominent piece within the update was a custom made, Dynasty vanity. The client fell in love with this cabinet and so did we! The vanity was downsized to accommodate the larger custom sized shower.

But as we know the remodel isn't only about those big pieces but as much about those small touches that can bring out the personality of the individuals it's being made for. For instance, the crystal hardware and the black plumbing fixtures brings dimension and contrast to the white spa like interior.

Custom built ins and a bench helped to carry the spa feel from the bathroom into the shower all while being practical to store all our lovely shower products that we have to have and encourage a little rest and relaxation. We absolutely loved transforming this bathroom from a dark outdated space to a luxurious place that makes our client feel pampered and elegant, fit for a Queen!

Furniture, a Brand Like No Other...

Furniture can easily make or break any design and can play an important role in your homes style. A good piece of furniture can bring a room design together or confuse and ruin a theme just as quickly. Today we will discuss how you can select furniture that makes your room feel complete, and brings together the design of your home!

Size Does Matter

It's time to get out that measuring tape! When selecting your furniture make sure your looking at items that are properly sized for the space. Furniture that is too big will make a room feel cramped, while furniture that is too small can get lost in the mix. A good rule of thumb is to buy pieces that can easily be walked around. For instance, a smaller room would look good with a few chairs and a small loveseat. In a large room you can do something fun like a sectional or a large sofa and a love seat combination.

Have you ever walked into a room and there was the one piece of furniture that stood out and made a statement? It just goes to show how one fantastic item can give you the umph to take that room from good to great. Not sure what style you want to go with in a room? Look for furniture that speaks to you and build the rest of the room around that beauty.

Another factor to keep in mind is getting Furniture that lasts. When you are spending good money you want to make sure that these gems last in style and function. Picking pieces that act as chameleons in the different styles that come and go will make the purchase worth your while. Now, don't get me wrong, playing with color and fabric is still a must and there are tons of fabrics and styles that will stand the test of time but be sure you aren't picking a fabric because it's the in style. If that piece can pair with at least 3 different themes and you have yourself a winner. Bring in the design of the year through those less expensive accessories and keep the iconic classic style in your larger items.

Along the lines of standing the test of time, make sure your Furniture is good quality. I know it's tempting when you come across that inexpensive price tag but keep in mind the amount of bums that will sit on your couch in a given year? Do all of our tushies a favor and put a little more on the front end and it'll last on the back end. Personally, we are big fans of Norwalk Furniture for quality. An American made company that builds furniture built to withstand those twenty five cousins is worth a look.

Last, but definitely not least, is tying all of it together. One of our favorite ways to display Furniture and bring in the latest styles is by showcasing everything on a rug. By putting a rug with your furniture you will help to define the living space, add another level of finish, and display your unique style all in one.

Ensuring the Beauty of Your Cabinets

There’s few things in life that bring bigger smiles than to walk into a brand new kitchen or bath knowing that our clients are going to experience years of joy and happiness from their dream space.

There are few things in life that bring bigger smiles than to walk into a brand new kitchen or bath knowing that our clients are going to experience years of joy and happiness from their dream space.

Kitchens, being the epicenter of the home, serve multiple purposes.

One of the primary roles is to prepare meals for family and friends. Cooking has a downside as far as cabinets are concerned.

Cabinets attract grease, spills, and fingerprints and require regular care to maintain their look and feel.

Stained wood cabinets should be cleaned semi-annually or quarterly if you are an avid cook, because wood grain tends to absorb grease and dirt.

Using a microfiber cloth, wipe down cabinets with water and a little bit of dish soap and then rinse with warm water.

Laminate cabinets should be wiped down with a damp microfiber cloth weekly. If you find that the cabinets still require TLC, then use the same dish soap and water mixture and approach recommended for stained wood cabinets.

Black and white cabinets serve as repositories for fingerprints, dust, dirt, and grime. They should be wiped down weekly with a damp microfiber cloth.

If you order white cabinets, request the showroom provide a small touchup kit that you can use to repair chips and scrapes that often occur with regular usage.

Make sure that you are cleaning up spills as soon as they happen as leaving these mishaps can discolor or cause additional issues if allowed to sit.

When wiping down cabinets be sure to only use a clean, preferably, microfiber cloth and then another to immediately dry the cabinet.

It is not recommended that any dish towel is used as there could be debris that is hiding in the rag.
